Ingredients Needed

To make about 1 cup (240g) of pistachio paste, we will need:

Raw pistachios1 cup (150g), unsalted and shelled

Powdered sugar½ cup (60g), preferably organic (with tapioca starch instead of cornstarch)

Roasted pistachio oil2 tablespoons (30ml) (optional but enhances the flavor)

Orange flower water1 teaspoon (5ml) (optional, for aroma)

Salt¼ teaspoon (a pinch, to enhance flavor)

Water1-2 tablespoons (15-30ml), as needed to adjust consistency

Step-by-Step Guide to Making Pistachio Paste

Step 1: Blanch the Pistachios

Blanching helps remove the thin skins from the pistachios, making the paste smoother and less bitter.

1️⃣ Bring a small saucepan of water to a boil.

2️⃣ Add the pistachios and let them boil for 1-2 minutes.

3️⃣ Drain the pistachios and rinse them under cold water.

4️⃣ Rub them with a clean kitchen towel or pinch them between your fingers to remove the skins.

Tip: Peeling pistachios can take some time, but it’s worth it for a smoother, brighter paste!

Step 2: (Optional) Toast for Extra Flavor

If we want a deeper, nuttier taste, we can toast the pistachios after blanching.

1️⃣ Preheat the oven to 300°F (150°C).

2️⃣ Spread the peeled pistachios on a baking sheet.

3️⃣ Bake for 5-7 minutes, stirring once halfway through.

4️⃣ Let them cool before processing.

Note: Toasting will make the paste darker in color, so if we want a bright green paste, we can skip this step.

Step 3: Blend the Pistachios

Now, let’s start making the paste!

1️⃣ Add the peeled (and toasted, if preferred) pistachios to a food processor.

2️⃣ Blend for 3-5 minutes until the nuts break down into a crumbly texture.

3️⃣ Scrape down the sides of the processor and continue blending until a thick paste forms.

If the mixture is too dry at this stage, add 1 tablespoon of warm water.

Step 4:Add Sweetness and Flavor

1️⃣ Add ½ cup (60g) powdered sugar, ¼ teaspoon salt, and 1 teaspoon orange flower water (if using).

2️⃣ Blend again until everything is combined.

Step 5: Achieve a Smooth and Creamy Texture

1️⃣ While the processor is running, slowly drizzle in 2 tablespoons (30ml) roasted pistachio oil.

2️⃣ Continue blending for another 2-3 minutes until the paste becomes silky smooth.

3️⃣ If the paste is too thick, add 1-2 tablespoons of warm water, one at a time, and blend again.

Tip: If we want a perfectly green paste, adding a tiny drop of blue food coloring can help balance the yellow tones.

How to Store and Use Pistachio Paste

Storage: Transfer the paste to an airtight jar and keep it in the refrigerator for up to 2 weeks. For longer storage, freeze it in small portions for up to 3 months.

How to Use It:

Spread it on toast, pancakes, or waffles.

Use it in cakes, tarts, or cookies.

Mix it into ice cream or yogurt.

Blend it into smoothies for a nutty flavor.

Make pistachio whipped cream by mixing it with heavy cream.
